Make an Egg-in-the-Hole Donut for a Better Breakfast for Two
You are probably familiar with the egg-in-a-hole, where the egg is cooked in a hollowed-out piece of toast (or other ingredients ). Food52 offers a smart update: use a bagel instead of toast.
Here are just two of the many benefits of this approach:
- The egg yolk remains soft and the white parts become crispy. Don’t believe me? When ready, lift the bagel up and you will see the bagel chained to the wire rack and small, cracked brown pieces of egg white.
- It is easier to make and eat than an egg sandwich : the yolk is in its hole and, when it is broken, is immediately surrounded by a bagel to wipe it off. There is also no need to turn or move the tender egg – or layering the ingredients while keeping the specified sensitive egg (sometimes in the morning this is really tricky. You know that).
You fry half a bagel in a skillet, split an egg into the bagel hole (enlarge if necessary), cover and cook for three minutes or until tender. Repeat with the other half of the bagel and you’ll have breakfast for two … or just you.
