Cook Almost Any Crunchy Crust on Two Baking Sheets
Whether it’s vegetables, cheese or prosciutto ham, few foods are as delicious as chips. To cook a whole bunch at once, just use two pans.
According to regulars at Bon Appetit, almost anything can be squeezed between two pans and placed in the oven for a salty snack. (I wouldn’t try it with cheese, I just don’t think it works very well.)
Cut the vegetable chips into thin slices with mandolin and brush with a little oil and salt before placing them in the pans. For prosciutto chips, line the skillet with parchment paper, place thin strips of tender ham on top, cover with another sheet or parchment, and top with another skillet. Bon Appetit doesn’t provide much information on temperature or time, but I would try 375 degrees until everything is nice and crunchy. (Check in about fifteen minutes later and continue.)
