Use a Can of Condensed Milk for the Creamiest Nacho Cheese Sauce

There is something great about Velveeta, but if you want a cheese sauce made from real cheese rather than a “cheese product”, you need a can of condensed milk.

First of all, make sure you are getting condensed milk and not sweetened condensed milk. Sweetened condensed milk is great for fortifying creamy desserts (and for making your own caramel sauce ), but all that added sugar is just unaccustomed to savory applications. Condensed milk has the same texture properties but no sweetness, making it ideal for homemade cheese sauce.

For convenience, this sauce is as simple as those made with Velveeta. Check out this recipe from Serious Eats, to find out the direction, but all you need is cheese, condensed milk and a bit of corn starch to stabilize (you can also add hot sauce). Put everything together and heat until it becomes bubbly and thick. Then grab your favorite chips (or fries) and start dipping.
