Make Thai Glutinous Rice With a Colander and Casserole

Thai glutinous rice (also known as sweet rice or glutinous rice) is a delightfully interactive grain that can be molded into small balls and balls that are perfect for dipping. Sticky stuff is usually made with a fancy basket, but you can do it in a colander as well.

We previously discussed cooking Thai Sticky Rice using splash guards , but Food 52 claims a colander is even better. Not only does it hold more rice than splash proof, it is also a much more common kitchen item. (I don’t know about you, but I have no splash protection.)

Rice is pretty easy to make, but the most important thing is to buy the right rice. Don’t hesitate, just know that jasmine rice is not what you are looking for; look for rice (preferably a Thai brand such as Three Horses) with words like “Thai”, “sweet rice” and “glutinous rice” on the package.

Once you’ve bought the right rice, soak it (Food 52 recommends 4-8 hours) and rinse quickly. Then take a saucepan (with a lid or foil) and a colander; Any colander will do, but for obvious reasons, make sure the holes are no larger than a grain. Food 52 can describe the process in more detail, but it’s as simple as steaming. Simply fill the pot with water (you want it to be a few inches below the bottom of the colander), place the colander in the pot, cover, bring to a boil, reduce heat, and steam for about fifteen minutes. … You now have delicious glutinous rice to dip in as many delicious sauces as you can make.
