Make Umami-Infused Demi-Glass Using Only Vegetables

Demi-glass (a rich brown sauce usually made from veal broth) tastes good on just about anything (pasta, meat, vegetables, etc.), but this umami bomb is forbidden for non-meat eaters. Luckily, the good folks at ChefSteps have come up with a vegan version that tastes exactly like the original.

Watch the video for detailed instructions, but all you need is about three pounds of thinly chopped vegetables (skins for a more earthy taste) with a little tomato paste and kombu . Roast it slowly and slowly (about 300 ° F) until the vegetables are almost burnt, then add water and let it sit in the oven for another forty minutes. Strain and reduce (maybe add a little pectin to thicken) and now you have a sauce that is not only full of savory qualities, but also suitable for vegetarians, vegans and gluten-free friends in your life.
