The Science Behind Baking the Perfect Chocolate Chip Cookie

Finding the perfect cookie recipe is no different than any other scientific experiment. This video shows you how to use baking science to find the perfect chocolate chip cookie to suit your taste.

We’ve already talked about some of the ways to customize a cookie recipe (using different sugars, adding baking soda, etc.), but this video from the Reactions YouTube channel explores some of the other basic components of cookies. It all depends on which cookies you like. For example, if you want a chewier cookie, use bread flour instead of all-purpose flour. For cookies with more complex flavors, bake at 375 degrees Fahrenheit instead of the standard 350 to ensure more caramelization. Even the temperature of the oil you use can change the quality of your cookie. The colder the butter you use, the more compact the cookie will be. However, if you use ghee, the biscuits will be thinner, crisper and wider in diameter.
