Use Dry Ice to Make a Soft, Ice-Free Serving
Some of our favorite warm-weather recipes include uncooked frozen desserts like blackberry and lemon ice cream, but if you don’t have an ice cream maker, you can often feel like you’re missing out. Luckily, you may be aware of recipes like this soft ice cream – no ice cream maker required.
Instead, this extremely fun video by ChefSteps explores a method that requires the use of a blender, stand mixer, pastry bag, some dry ice, and some elbow grease. And unlike any other soft serving you’ve likely eaten, this one contains just six ingredients, and they’re all natural: milk, cream, sugar, salt, vanilla, and milk powder.
The process is actually quite simple: mix the ingredients together to form a base; crush dry ice into sandy pieces. Then beat the base in a mixer while slowly adding dry ice. Sure, you probably don’t have dry ice in your home, but it’s relatively inexpensive (around $ 2 a pound) and can be bought at most grocery stores. It also makes for a pretty fun weekend project, especially with kids.
