Use Cream Cheese to Make the Creamiest Grilled Cheese Sandwich

I’ve always been pretty straightforward when it comes to grilled cheese sandwiches, so I resisted a little when Epicurious’s Anna Stockwell suggested adding in one cream cheese . My skepticism is misplaced however it makes a super creamy sandwich.

You see, if you do everything right, you won’t even notice that there is cream cheese here. Its primary role is to suspend harder grated cheeses and ensure a super even and creamy melt – a technique that Stockwell adopted from the delicious Cowgirl Creamery Cooks (who also recommend three different cheeses):

For the most creamy middle, one of these three cheeses should be soft fresh cheese. Soft cheese “acts like a suspension; just as egg whites weigh heavier particles in a soufflé, so soft cheese weighs grated cheese and spreads it more evenly over the bread. “

Any soft cheese will do, but I would rather have cream cheese in my fridge than, say, blanc. I’m not saying this will completely replace my main grilled white bread / American cheeses, but it will definitely take a place in my sandwich rotation (and in my heart).
