Juicy Flavored Grilled Chicken Cutlets in Five Minutes
Busy weeknights often require quick , healthy meals that don’t take a whole night to cook. J. Kenji Lopez-Alt of Serious Eats offers a three-part method with which you can make flavorful chicken cutlets in just a few minutes.
Prepare a delicious marinade first . It will add flavor to your chicken, even if you just cover the cutlets with it. Choose intense aromas such as herbs and aromas (garlic, shallots) combined with black pepper and olive oil. Finish with a little acid from the lemon juice. Save half the marinade for a delicious sauce to garnish the chicken after grilling.
Then cut the chicken breasts into cutlets. Since your ultimate goal is to grill chicken in just a few minutes, this will dramatically reduce cooking time. Cut them in half (along, along the plane) and crush them. Dip the patties in the marinade, making sure to cover each side with herbal and flavoring bits to really pick up the flavor on the chicken.
Care must be taken when preparing such thin cutlets to keep them juicy. Place each patty on one side of a wire rack (over high heat) until almost completely cooked through. Then turn over to finish cooking on the second side in just a few seconds. In just a few minutes, you have a very aromatic toasty first side and a juicy, tender second side.
