Three-Way Watermelon Jam Is a Great Way to Recycle the Rind

Watermelon pickles have long been a popular recipe for processing tough white rind, but if you want to stir it, watermelon rind jam is an even easier way to turn them into something delicious.

Using just three ingredients (zest, sugar, and lime), a little maceration overnight, and a little heat, this recipe (link below) turns the most tasteless part of a watermelon into a ton-depth sticky candy jam. Now you not only have a delicious salat for your morning toast (or topping for a summer sorbet), but the only part of the melon heading into the compost heap is the bitter green rind.
