Get Rid of the Heat Before Adding Egg-Based Sauces to Your Food
Egg based sauces like Dutch are the ones that everyone should know how to cook . The next time you have one that you want to add to a hot dish (like pasta), remove the pan from the heat or you’ll end up with a lumpy mess.
As Chef Michael White demonstrates in the video above (fast forward to 3:40), move the pan completely off the stove to a cool surface before pouring in the egg sauce. Toss the dish so that the sauce covers everything evenly, then serve. Avoid leaving the sauce in the pan for too long (even after removing from the heat), as the heat from the pan can make the sauce. With just this little extra step, you can make a much better meal.
