Make Persistent Whipped Cream by Adding Sour Cream
Whipped cream is best served fresh, otherwise it will turn into melted porridge. But if you need to whip the cream first, add a spoonful of sour cream to keep the texture intact long enough to serve.
Anna Stockwell of Epicurious tested this trick. She explains that the sour cream didn’t really affect the flavor much, but the extra fat helps stabilize the whipped cream and isolate the air, keeping it airy. If you don’t have sour cream on hand, you can use Greek yogurt. If you add one of these to your next serving of homemade whipped cream (plus freeze it for an hour), it will last two to three hours.
