This Chart Shows Which Cooking Oils to Use Based on Their Health Benefits.

It makes sense to have more than one cooking oil in your kitchen, but which one is best for you? This infographic from Information Is Beautiful sorts oils by fat content, smoke point, and flavor.

The oils are grouped by smoke point, and the chart suggests use cases for each group (for example, sunflower oil for deep-frying or roasting, grape seed oil for baking or oven cooking). It also shows the percentage of saturated, polyunsaturated, and monounsaturated fats in each oil, as well as trans fats when the oil gets too hot. While saturated fats are not necessarily the devil we were taught, you may prefer oils with larger green stripes (monounsaturated fats) and a good ratio of Omega-3 compared to Omega-6 fats.
