Difference Between Types of Salt (and When to Use Them)
Perhaps the most important aspect when preparing food is seasoning it well. After all, salt is the secret to why so many restaurant dishes, including salads , taste so good. And the first step to knowing how to season properly is knowing which salt to use.
This video on the types of salt, courtesy of Cooking Instructor Helen Rennie, illustrates the difference between kosher, table, and sea salt and explains when to use each. Since different salts contain different amounts of salt in the same volume, half a teaspoon of one salt can be as salty as a whole teaspoon of the other. Helen notes that the easiest way to accurately season large amounts of salt is to measure salt by weight, not volume.
She also talks about the best all-purpose table salt (hint: there is a reason most recipes use kosher salt ), the best baking salt, and what types of salt to avoid. Go see.
