Reliable 5-Ingredient Ice Cream, No Preparation Required
We recently discovered the miracle of making popsicles with just two ingredients , but if you are more into ice cream, here’s a frozen dessert alternative that’s almost as simple.
This five-ingredient blackberry and lemon ice cream is courtesy of Posey Harwood of Food52 and requires just two steps (none of which involve cooking). The most difficult process when making ice cream is making a custard, because a good custard requires careful technique. When making a traditional ice cream custard, it’s important to heat the egg yolks just enough to thicken the custard, but they also tend to cook and curl if they’re too hot, and if you don’t want sweet scrambled eggs, you need to strain every bit of it.
This recipe, on the other hand, is based on the use of sweetened condensed milk to thicken the mixture (as well as our other favorite two-component ice cream ). Harwood writes about this recipe:
I have never liked ice cream without cooking. I found it lacking in richness and flavor. But this recipe changed his mind. Two cups of mashed blackberries and a hefty dose of lemon juice give the ice cream a rich, full-bodied flavor that balances out all the creaminess.
