Tying the wings and legs of the chicken is an important step in roasting the entire chicken evenly; it cooks moist meat evenly and prevents everything inside from falling out. But even if you don’t have kitchen twine on hand, you can still tie the chicken with your own skin.
Food & Wine Kitchen Editor Justin Chapple demonstrates the method in the video above. Basically, you need to make an incision in the skin surrounding the cavity of the chicken by tucking the opposite drumstick into the notch; Then you repeat the same technique on the opposite side.
This short clip is useful for showing you where to cut the chicken (and also what to do to preserve the wings). Now, you just need to figure out what to do with all that delicious fried chicken.
