Make “almost” Pickles in Just Ten Minutes
Ever reached for pickles only to find they were gone? If you have a cucumber, you can get to something close in just ten minutes.
All you need is a cucumber, some salt and sugar, and a bowl. For a medium-sized cucumber, toss the wedges into a bowl with about a tablespoon of sugar and 1.5 teaspoons of kosher salt (or a teaspoon if using table salt). You can also add other spices, garlic or pepper if you like. Stir the slices and let sit for ten minutes. Salt and sugar draws moisture from the cucumber, which is then marinated in a sweet, salty liquid.
Last night I tried to make them myself. No, they don’t have the vinegar punch of a fully pickled cucumber. But they are quite similar in texture and the taste is pleasant enough that you won’t mind using it in a sandwich or burger, especially if you add vinegar or mustard to it to bring back some acidity.
