Power up Your Everyday Meals With This Sweet and Spicy Aroma Bomb
It’s easy to fall into the culinary rut on weekdays when time, energy, and creativity are often at a minimum. I like to keep a collection of multi-ingredient flavors in my back pocket to shake up my standard recipe with minimal effort. Recent obsessions include anchovy oil , mustard sauce and today’s recommended enhancer: a quick combination of red curry paste and maple syrup.
Start with equal parts Thai red curry paste and pure maple syrup (no maple syrup please), then adjust the balance to taste. Maple syrup lends a complex sweetness with hints of brown sugar and smoke, while red curry paste lends a fresh, sour spice. Both ingredients keep well in the refrigerator, so you can easily whip this sauce as needed.
Here are some ways to use this red curry paste and maple syrup mixture effectively:
- Glazed salmon. Pour the sauce over the skinless salmon fillets evenly, season with salt and pepper and marinate for 20 minutes. Drizzle with neutral oil, then fry the salmon until cooked through and glaze (5-7 minutes).
- Fried chicken. Whisk the sauce with the olive oil, then grate the chicken whole or in chunks. Season with salt and pepper and roast until cooked through (time varies).
- Fried vegetables. Cut vegetables into even small pieces, then mix with sauce, olive oil, salt and pepper. Root vegetables like potatoes, carrots and parsnips go well here. Also hard gourds such as nutmeg, delicacy and kabocha. Cook until vegetables are tender (time varies).
