Prepare the Right Kale for Salad With a Leaf Massage
Cabbage leaves can be quite tough if you don’t prepare them properly. You can easily make them soft for a salad without heating them with light massaging movements.
Before kale became super popular, it was used in cooking so that the heat could soften the rough leaves. This video from America’s Test Kitchen YouTube shows two lesser known methods of making coleslaw. After you’ve removed the leaves from the stem , cut them into quarter-inch strips and massage the leaves for a few minutes. Now you can have a delicious coleslaw salad with a softer and more pleasant texture.
