Cook the Perfect Grilled Chicken in Less Time in Two Cast Iron Pans
Cast iron pans are great . With this tip in mind, you might want to have two in your kitchen for a perfectly fried chicken dinner.
A single cast iron skillet will be used in place of bricks in the Chicken Under the Brick method (which is also great outdoors ). The heavy frying pan puts pressure on the chicken and helps the meat cook evenly.
As Adam Roberts explains in The Amateur Gourmet:
Think about everything you want the chicken to be when you cook it: really crispy on the outside, really moist on the inside, and full of flavor. Chicken under the Brick completes all three tasks in less time than regular fried chicken.
You can of course use traditional bricks wrapped in aluminum foil or a panini press , but that’s a reason to buy another cast iron pan.
