Sharpening a Knife With a Black and White Newspaper
A sharp knife will keep your kitchen safe and productive. If you don’t have a coffee mug on hand , a dry newspaper is great for sharpening the edges.
This is old advice from sushi chefs, and Sushi Secret explains how it works:
Spread out a sheet of dry newspaper (completely in black and white ink). Place the knife blade on newsprint and gently run the blade over the paper, keeping the blade level at all times. Do this several times and repeat the same number of times on the other side of the knife. If the knife is made of carbon steel on one side, there is no need to repeat on both sides evenly. Before use, lower the knife under water and dry it to remove debris.
As we said earlier, honing and sharpening are not the same thing . The rough surface of the newspaper is enough abrasive to achieve the goal, but you may still have to sharpen it along the line anyway.
