Vegetable Puree for a Faster, Thicker Tomato Sauce

Everyone should learn how to quickly and tasty make tomato sauce . Save time by mashing vegetables with a food processor.

In an interview with Food & Wine, Chef Salvatore Cracco explains why this method helps to make the sauce better:

Finely chopped vegetables literally fall apart and dissolve in the sauce, adding consistency to the sauce, which helps it coat the noodles better. You get all that flavor and it saves you so much time.

Be sure to prepare the water after you have mashed the vegetable, and then prepare the sauce as usual. This method allows you not only to chop vegetables by hand, but also to make the sauce thicker. If you don’t have a food processor, try a metal sieve or blender.
